Vegetarian Thai Green Curry – Serves 4.

Ok, so as some of you may have noticed, I cook with a lot of Quorn. I don’t actually remember the last time I cooked with meat and the only time I eat meat is when I buy food on the go. I thought I’d challenge myself to becoming a vegetarian to see if I could actually do it and to see if there is any change in my workout progress.

Quorn Cottage Pie – Serves 4

This is another recipe using Quorn mince in place of beef mince. Although I’m not vegetarian, I much prefer the taste of Quorn over beef mince and find cooking with it much better too. I find that I have to drain beef mince of excess fat, whereas Quorn mince I don’t. Just be sure to double check your Worcestershire sauce if you are a vegetarian and trying this recipe! Carbonara is my favourite go-to ‘cheat meal’ – this is the only time I’ll call it a cheat meal. It’s not cheating if it fits your macros!

I love eggs. Honestly, whoever thought it’d be a good idea to eat these things a chicken produced all those years ago is a total genius. I eat eggs whenever and wherever I can, they’re the main reason I can’t/won’t become a vegan. They’re just too good!

Almost every day I have scrambled egg on toast for breakfast. But this gets boring fast. So, under the recommendation of a friend I decided to mix it up with some mushrooms and spinach I had leftover in my fridge.
