Vegetarian Thai Green Curry – Serves 4.
Ok, so as some of you may have noticed, I cook with a lot of Quorn. I don’t actually remember the last time I cooked with meat and the only time I eat meat is when I buy food on the go. I thought I’d challenge myself to becoming a vegetarian to see if I could actually do it and to see if there is any change in my workout progress.
It’s been a while since I’ve posted a recipe and Thai Green Curry is one of my favourites. I haven’t had it since I was young and so I thought I’d put my own twist on it. Continue reading “Thai Green Curry”
Quorn Cottage Pie – Serves 4
This is another recipe using Quorn mince in place of beef mince. Although I’m not vegetarian, I much prefer the taste of Quorn over beef mince and find cooking with it much better too. I find that I have to drain beef mince of excess fat, whereas Quorn mince I don’t. Just be sure to double check your Worcestershire sauce if you are a vegetarian and trying this recipe! Quorn Spaghetti Bolognese – Serves 4
I love a good spag bol (and I know I’m not the only one!) but we all know that you can’t possibly have a great tasting spag bol without the added sugars, salts and fats. Or can we? Continue reading “Vegetarian Spaghetti Bolognese”
Carbonara is my favourite go-to ‘cheat meal’ – this is the only time I’ll call it a cheat meal. It’s not cheating if it fits your macros!
It’s simple to make, but the sauce traditionally contains a lot of cheese. So I thought I’d share with you my favourite recipe minus (most) of the cheese. The great thing about this recipe is that it also contains a good amount of protein! Continue reading “Vegetarian Carbonara”
I love eggs. Honestly, whoever thought it’d be a good idea to eat these things a chicken produced all those years ago is a total genius. I eat eggs whenever and wherever I can, they’re the main reason I can’t/won’t become a vegan. They’re just too good!
Almost every day I have scrambled egg on toast for breakfast. But this gets boring fast. So, under the recommendation of a friend I decided to mix it up with some mushrooms and spinach I had leftover in my fridge.
The result? Unbelievable. They’re the ultimate breakfast for me, especially as it’s packed with a good amount of protein. Continue reading “Spinach & Mushroom Scrambled Egg”
I am always thinking about food. Even as I type this, I’m thinking about the fish I’ve put in the oven for my tea, along with the cottage pie I’m cooking tomorrow.
So I thought I would share with you one of my favourite post-workout snacks. Continue reading “My Favourite Post-Workout Snack”
Anyone who works in an office knows the struggles of maintaining a healthy and balanced diet. I’m probably one of the worst people for taking time out to eat lunch and have a break, there’s just never enough time in the day. Without all of the cakes that seem to appear at my office – there must be at least one birthday every week!
So, here are a few tips I try and stick to in order to maintain a good diet and snacking healthily in the office. Continue reading “7 Ways to Keep Unhealthy Office Snacking to a Minimum”
